If you were given Agidi Jollof, what would you try it with? Pepper soup? Yam? This simple meal is a common one, eaten by all Nigerians and defies tribe.
• Bone marrow/ Biscuit bone
• Habanero pepper
• Vegetable oil
• Seasoning cubes
• Seasoning powder
In a pot, pour the meat, onion, seasoning cubes and boil for 15 minutes. Set aside.
Wash your corn and boil for 6 minutes then drain the water. Blend until smooth then sift.
Pour the blended corn puree in a sieve cloth and use water to remove the chaff. Cover and let it settle for 3-4 hours.
Wash and blend your tomatoes, pepper and onion until smooth or rough if preferred.
In a saucepan, heat up your oil and fry your tomato mix for 15 minutes.
Add seasoning powder, cubes, beef stock and cook for 5 minutes.
Pour the corn mix into a pan and stir gently on medium heat for 10 minutes to a right consistency.Stir fast until thick.
Pour pepper mix and stir thoroughly.
Grease your bowl and pour a little corn mix. Add the bone marrow and leave for 3 hours until it is thick.
NOTE: Before you pour the tomato mix into the corn, test with cold water and if it splits, stir the corn mix again but if it doesn’t, then you can pour the tomato mix. Also, do not leave the corn unattended to prevent lumps
